Vegetarian Borscht Recipe

Borscht is not just a dish for Ukrainians, it is part of the national treasure that gives warmth and comfort. Today we will share a recipe for vegetarian borscht, which has preserved the classic taste, but is an ideal option for those who choose a plant-based lifestyle.

Ingredients

Before we get started, make sure you have all the ingredients you need to make this delicious borscht.

Main ingredients:

  • 2 beets, selected and chopped
  • 1 potato, peeled and chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cabbage, shredded
  • 3 tomatoes, chopped
  • 1 red pepper, chopped
  • 3 Art. spoons of vegetable oil
  • 1/2 cup tomato juice
  • 1/4 cup of vinegar
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • 8 cups of vegetable broth

Garnish:

  • Sour cream
  • dill
  • Lemon

How to cook

1. Preparation of ingredients

Start by preparing all the vegetables. Cut off the ends and skin of beets, potatoes and carrots. Cut them into small pieces. Also cut onions, tomatoes, peppers and cabbage.

2. Frying vegetables

Heat the vegetable oil in a saucepan over high heat. Add onions and fry until golden. Add beets, potatoes and carrots. Fry for 5-7 minutes until the vegetables are browned.

 
 

3. Adding the rest of the ingredients

Add chopped tomatoes, peppers and cabbage to the fried vegetables. Pour tomato juice, vinegar and broth. Add sugar, salt and pepper to taste. Reduce the heat and cook the borscht for 20-25 minutes until the vegetables are soft.

4. Subordination

Divide the finished borscht into portioned bowls. Garnish each portion with sour cream, fresh dill and a lemon wedge.
